We humans are entwined in ways beyond the visible with other living creatures. In the deepest parts of ourselves, we are still closer to the rhymes and cycles of plant time. It is in plant time that our spirit thrives. I didn´t start cooking until I moved to the tropical rainforest in East Maui to pursue a simpler life. I found it not only a necessity but also an inspiration to create using the food from my land. I have been a visual artist all my life. I daily think about composition and dream about my artwork. After moving to Hana, I found myself contemplating variations and colorings of tastes in dishes. I would wake up with an inspiration for a new recipe. All the recipes in this book follow the "keep it simple" rule. I live without refrigeration, 3 hours away from the closest, real food, store. Simplicity and freshness are a necessity. The portions are for eating that day. Anything left over goes to feed the animals, the insects or the land. In nature, nothing is wasted. In death there is life. I hope that my visual art feeds your eye, my recipes feeds you body, and they both feed your soul.
